Layers and layers of creamy, cool, crunchy make this treat the ultimate dessert. They're easy to pull together for a last minute dinner party or to make for a movie night in. Swap out the layers for other fruit, sauces, cookies, and more to make your own custom parfait.
1 Pint of Prepared True Scoops Vanilla Bean Ice Cream
1 Bag of Shortbread Cookies (we like Spritzal brand), crushed
½ Cup of Plain Pumpkin Puree
1 Tsp Cinnamon (or Pumpkin Pie Spice)
1 Cup of Prepared True Scoops Salted Butterscotch Sauce
1 Can of Whipped Cream
In a small bowl, add the pumpkin puree, cinnamon, and about ¼ Cup of the salted butterscotch sauce. Stir to combine. Add more sauce or cinnamon to taste.
In the bottom of each glass, add one scoop of ice cream and flatten it with a spoon so it becomes an even layer.
Top the ice cream with a big spoonful of the pumpkin mixture
Top the pumpkin mixture with some of the crushed cookies and then drizzle salted butterscotch sauce.
Repeat with another layer of ice cream, pumpkin, cookies, and salted butterscotch until you get to the top of the glass.
Top each parfait with whipped cream and a drizzle of salted butterscotch sauce. Serve immediately.
*If you want to prepare these in advance, add everything but the whipped cream and keep in the freezer. Remove from the freezer about 15 minutes before serving so they can soften up a bit. When ready to serve, add your whipped cream and sauce.
