How to Make Homemade Ice Cream Without a Machine

So you’re craving homemade ice cream but don’t have a giant pail at your disposal? No ice cream machine? No problem! There are so many ways you can make ice cream at home that require no churning, and that can be made easily and quickly using stuff you already have. If you’re doing it the longer way, you can use heavy cream and condensed milk to work on your ice cream base. We like to take a sweet shortcut and use our two-step  True Scoops ice cream mixes  which were created exactly for convenient at-home ice cream recipes! We’re here to show you some super easy ways you can use True Scoops Ice Cream Mixes to make yummy ice cream desserts at home.


Method 1: Electric Mixer Method

This is our go-to! True Scoops was designed around the Electric Mixer Method, using two ingredients and you guessed it, an electric mixer. Our ice cream mixes now come in a pint container that you can use to store your homemade ice cream. Need more storage tips? Check out  this blog post!

  1. Simply pour the ice cream mix and half-and-half into a bowl
  2. Mix on low speed for 1 minute and then on high for 4 
  3. Pour the mixture back into the pint container and freeze 4-6 hours or until firm

Method 2: Plastic Bag Method

This method is really fast, and gives you ice cream the texture of soft serve.

  1. Whisk together half a pouch of True Scoops ice cream mix and ½ a cup of half-and-half until combined. 
  2. Place that liquid mixture into a zip top plastic bag, pressing out as much air as you can, and seal. 
  3. Place that bag into another plastic bag along with ½ cup of salt (the chunkier the better) and fill the bag halfway with ice and seal the bag.  
  4. Your hands are going to be cold! So you might want to wear gloves or wrap the bag in a dish towel.
  5. Shake vigorously for 6 minutes or until the ice cream has firmed up to the consistency of soft serve. The harder you shake, the smoother the ice cream.
  6. Eat it immediately or place in the freezer until it’s firmer.

Method 3: Freeze & Stir Method

This is a classic no churn recipe made in a dish. You can add all sorts of toppings here to curate your own flavor concoctions.

  1. Combine True Scoops ice cream mix with half-and-half 
  2. Place the unchurned mixture in a deep stainless steel baking dish and freeze for 45 minutes.
  3. When you notice the edges starting to freeze, take it out of the freezer and stir vigorously with a whisk or electric mixer.
  4. Return to the freezer.
  5. Continue to check the mixture every 30 minutes, stirring vigorously as it’s freezing.
  6. Repeat this process until frozen (2-3 hours.)
  7. Transfer to your pint container for storage (if you manage to not eat it all.)

Method 4: Food Processor or Blender Method

Also handy for flurries and shakes!

  1. Make your ice cream base by combining the True Scoops Ice Cream Mix and half-and-half per package instructions
  2. Pour into a zip top bag, squeeze out all the air, and seal tightly.
  3. Freeze, lying flat, until solid. You might want to rest this in a dish to avoid any spills.
  4. This will get pretty hard when frozen.
  5. Break the frozen mixture into chunks small enough to fit into the bowl of your food processor or a high-powered blender.
  6. Pulse until completely smooth.
  7. Fold in toppings and transfer to your pint container.
  8. Freeze until you’re ready to serve.

Flurry

  1. Put frozen scoops of True Scoops ice cream along with your favorite mixins (cookies, candies, nut butters, candies, etc) and pulse until the mix-ins are incorporated but not fully pulverized and the ice cream is the consistency of soft serve. 
  2. Serve immediately and you have your own version of a DQ Blizzard or McFlurry.

True Scoops “Quickshake” 

  1. Put 1 pouch of True Scoops Ice Cream Mix, 1 cup of half-and-half, and 2 cups of ice, and any flavorings, mix-ins, or sauces, and blend on high for 30 seconds or until everything is combined and the mixture is thick. 
  2. Pour into tall glass, top with whipped cream, and serve immediately! 

Pro tip: Place your glasses in the freezer for a few minutes before serving to keep your “Quickshake” nice and cold!
